From what I saw in the picture, I say leave the counter tops as they are (unless you really want to change them), strip the cabinets and maybe refinish in a lighter color, and the backsplash could be a pretty sage green or something like that... But that's just what I'd do if it were my HUGE kitchen!

The kitchen is YOU!! You're gonna love having all that room!. I agree, tile is fine...cabinets would be good stripped either lighter or white (if you like white in a kitchen)...I'd tile backsplash or paint bright...but you know that is me and my love of bright colors.
I would leave the tile for now and later on change it. But I would for sure paint the cabinets a white or Irish Cream color. On the backsplash, I would for sure put something up. You could tile it or you might consider the pressed tin for the backsplash. It can come in different colors or patinas and it makes for a nice look in my opnion. And Natalie is adorable!
